Oriental cuisine not only amazes with its variety, but also contains recipes that are easy to prepare yourself at home. One of the main tasks of the Japanese is to preserve the beneficial properties of products. We understand in detail what are the features of Japanese cuisine and how to cook famous dishes.

Main ingredients

Thanks to the Japanese, soy and soy sauce have become very popular. Soy protein is similar to meat protein, so it is essential for vegetarians. In Japan, soy is eaten every day: in the form of tofu , milk, sauce.
Rice is an invariable part of most dishes. It can be cooked at any time of the day. Rice is steamed or boiled.
Of the vegetables, the Japanese are in demand for eggplants, tomatoes, mushrooms, radish, sweet potatoes.
Japanese ingredients less familiar to us are burdock and lotus root, beans, bamboo sprouts . They contain protein and medicinal properties that lower cholesterol levels.
Japanese cuisine cannot be imagined without horseradish or wasabi , which can replace any spices.

Onigiri
These are nori and rice envelopes stuffed with seaweed.
- You will need: rice, nori.
Rice should be thoroughly washed repeatedly. Then fill it with water and cook for 20 minutes. When ready, stir and leave to cool.
We take some rice, press it in the palm of our hand, shape it. We make a depression in the center, put the filling, sprinkle with rice (usually onigiri have a triangular shape). You can decorate the top with seaweed.
Spicy eggplant
- For this dish you need 2 eggplants, soy sauce, ginger, sesame seeds and salt.
Process vegetables - wash, dry. Then cut them into cubes, salt and leave for 20 minutes to avoid bitterness. Then rinse again.
Cooking the dressing: grate the ginger, add soy sauce to it. Then put the eggplants in a heated skillet and fry for 15 minutes. Add the dressing, simmer for a few more minutes. Sprinkle with sesame seeds before serving. Done!
Spring rolls
- You will need: cilantro (1 bunch), rice paper (10 sheets), avocado (2 pieces), cucumbers (3 pieces), carrots (1 piece), a bunch of romanos.
Cut cucumbers and carrots into thin strips. Cut the avocado into thin slices. Tear up romano and cilantro.
We keep the sheets of rice paper in warm water for a few seconds, put them on a dry surface, wrap the filling in each one.
Spring rolls should be served with soy sauce and, optionally, with wasabi. Bon Appetit!
Japanese rice
- You need: rice, bell pepper (yellow), beans, onion, canned corn, carrots, soy sauce, salt, sugar, garlic.
Salt water, cook rice in it. After cooking, leave to cool. We cut the vegetables mentioned above.
We take a stewpan, heat oil (vegetable) in it. Put vegetables, keep on fire and stir for 10 minutes. Add some soy sauce and sugar. Put corn and rice in a saucepan, simmer over low heat for 10 minutes.
Turn off the stove and leave the dish on it to rise.
Seaweed soup
- For the soup you will need soy sauce, tofu, seaweed, miso paste, onion, bell pepper, honey mushrooms.
First, you should soak the algae, and add water to the paste. We cut vegetables, boil for 5 minutes. Add ready-made mushrooms and soy sauce, cook further. Add water, bring to a boil, add algae and remove from the stove after a couple of minutes.
Later, add the miso paste, stir the dish, toss the tofu cubes. Enjoy!
Ramen soup
- To prepare the dish, you will need vegetable broth, carrots, bell peppers, hot peppers, mushrooms, udon noodles, a bunch of fresh spinach and green onions, soy sauce.
We cut the carrots, cook until soft. Chop the mushrooms and fry in vegetable oil. Cut Bulgarian and hot peppers into strips, coarsely chop spinach and onions.
Cook the noodles according to the instructions on the package. Put the noodles, ingredients in a bowl, pour in the broth and soy sauce.
Mochi
We make a famous delicacy from Japan - rice flour balls with filling.
- What is required? Rice flour, cane sugar, purified water, vinegar (3 drops). The filling can be made from fruits, cereals, nuts, jam.
First, prepare the filling - for example, chop fruits and nuts.
Add sugar and water with vinegar to the flour.
Carefully monitor the consistency of the dough, there should be no lumps! Mix the mass thoroughly by adding water. Cover with cling film, leave for half an hour in a warm place. After that, you should have a sausage, which you divide into small equal parts. Having rolled each one, put the filling in the center, close it and give the shape of a ball.
When serving, sprinkle with powdered sugar on top.
Yokan
- You will need: anko bean paste, cane sugar, water, agar agar.
Pour water (300 ml) into a saucepan, add agar-agar and keep on fire for about 10 minutes, do not bring to a boil. Then add the bean paste and cook until the mixture smokes.
Pour the resulting mixture into molds and leave to cool. Top with jam or caramel. Bon Appetit!
