The university was founded in 1840 in the Rostov region. 

The learning process includes a course of lectures and seminars, practical and laboratory classes, educational and pre-diploma practice.

The educational process is based on the following faculties:

• Veterinary medicine;
• Agronomical;

• Economic.

The university also has branches:

• Azov-Black Sea Engineering Institute;
• Novocherkassk Engineering and Reclamation Institute named after A.K. Kortunov.

The university conducts research in the following areas:

• Study of natural and anthropogenic factors of origin and evolution of agricultural landscapes and steppe geosystems of the South of Russia;
• Study of the state of steppe ecosystems with different levels of anthropogenic load;
• Scientific and practical substantiation of increasing the efficiency of food production from raw materials of animal and plant origin, taking into account consumer characteristics, requirements of food production;
• Development of recipes and technologies for the production of functional food products of animal origin;
• Optimization of technology and development of recipes for meat products based on lamb in order to increase their biological value;
• Scientific and practical foundations for the formation of the quality and safety of competitive functional products aimed at import substitution and their integral assessment;
• Conduct patent research, analysis of the state of knowledge of the issue and trends in the development of technologies for competitive functional dairy products;
• Development of recipes for dishes and food products with functional properties;
• Development of innovative energy-saving safe technologies and equipment for the agro-industrial complex;
• Development of the basics of biologization, intensification and resource conservation in the technologies of cultivation of field, fodder and berry crops for various soil and climatic zones of the Rostov region.

In DonGAU, the learning process is divided into two semesters: autumn and spring. At the end of each, an examination session is held, after passing the students, they are given vacations (in winter in January, in summer in July and August).
